Ginger Curry

inji-curryIngredients :

  • Ginger – 250 gm
  • Tamarind – 25 gm (A lemon Size)
  • Chilly powder – 4 tsp
  • Coriander powder – 6 tsp
  • Jaggery – 25 gm
  • Mustard – 1 tsp
  • Curry leaves : 1 Sprig
  • Salt : As required
  • Fenugreek powder – 2 tsp
  • Oil : As required

Preparation Method:

  1. Cut the cleaned ginger in round slices. Fry them in coconut oil.
  2. Crush the fried ginger.
  3. Squeeze the tamarind in water and and make a pulp.
  4. Heat the leftover oil in the pan. Splutter mustard seeds.
  5. Add the curry leaves and the coarsely ground ginger and saute.
  6. Add the chilly powder, coriander powder, turmeric powder, fenugreek powder and saute well.
  7. Add the tamarind extract, jaggery and salt.
  8. Let it boil till it becomes thick. Add the fried fenugreek powder & mix. Remove from fire.
  9. The kerala special ginger curry is ready.
